Curriculum for Junior High School Students: Dairy Food Consumption Self-Efficacy

A nutrition education module for a family and consumer sciences curriculum was developed and evaluated with junior high school students (n = 63) using a quasi-experimental design. The multivariate interaction between time of measurement and intervention was significant, F (2, 50) = 8.68, p = 0.001.The univariate interaction between pre and post assessment, F (1, 51) = 17.47, p less than 0.0001, and between pre and follow-up, F (1, 51) = 6.14, p = 0.017 likewise were significant. Dairy Self-Efficacy Survey (DSES) scores correlated (p less than 0.05) with milk and cheese practices at posttest and milk consumption at follow-up. School-based nutrition education can improve self-efficacy related to dairy food consumption in adolescents. (Contains 3 tables.)
