Building Nutrition Skills with the Breakfast Cafe Webquest
Nelson, Diane
Journal of Family and Consumer Sciences, v97 n2 p59-60 Apr 2005
This article describes the nutrition component of a Home and Career Skills curriculum at Hommocks Middle School (Larchmont, NY) that includes the Breakfast Cafe Webquest, which encourages 7th graders to increase the amounts of fruits and vegetables in their diets as well as reduce serving sizes. Using this Webquest, students "help the Breakfast Cafe in town plan a more nutritious breakfast menu." The Webquest includes an authentic task, Web sites, steps to follow and a rubric to guide expectations and assessment. Students use the Internet, mini-lessons, "how-to" sheets, the rubric, handouts, and teacher-produced nutrition videos to gain skills and information about planning a healthy, tasty breakfast menu. At the conclusion of the Webquest, the students prepare a healthy quick bread and a fruit smoothie for the rest of the class.
