Utilizing a Technology-Based Meal Planning Engine, EatLove, Simultaneously with Virtual Cooking Classes and Virtual Guidance to Eliminate Provider Barriers and Promote Improved Nutrition Choices by Patients at Neucare Clinic

Background: Poor dietary behaviors are a known risk factor for many chronic diseases (Patrick et al, 2006). Nearly 80% of chronic diseases are reversible or preventable with a healthier lifestyle (Mauriello & Artz, 2019). Despite this, nutrition counseling is only occurring in 24-45% of primary care visits (Gans et al, 2003). Improved nutrition can reduce the burden of chronic disease and decrease healthcare costs (Mauriello & Artz, 2019). Purpose: The purpose of this project was to utilize the EatLove meal planning engine to assess the impact on patient nutrition choices. Method: This project used cross-sectional design. The theoretical framework Plan, Do, Study, Act (PDSA) was used. The instrument, Rapid Eating and Activity Assessment-shortened version (REAP), was emailed to participants after consent had been obtained. The EatLove program took place over four weeks with researcher check-ins and virtual cooking classes. Open-ended questions were asked during check-ins to determine patient motivation for change. The REAP-shortened version was re-administered. Data was presented to providers at Neucare Clinic. Results: Results were determined based upon REAP-shortened version pre and post data as well as researcher check-in questions. Conclusion: This project helped to determine what impact the study had on participant nutritional choices.
