For several years the Bureau of Education has been promoting home gardening under the direction of the schools in cities, towns, suburban communities, and industrial villages. The war and the consequent high prices of food have given a great impetus to this movement, and there are now many hundreds of thousands of children cultivating gardens in the back yards of their homes or on vacant lots near by. Under intelligent and constant direction it is comparatively easy to raise vegetables and small fruits, and this year children have grown many millions of dollars' worth. But the full value of these products cannot be bad without their careful preservation and intelligent use. These are no less necessary to both the economic and educational results of home gardening than are careful and intelligent planting and cultivation. To assist the children and their parents in these and also for the guidance of teachers of gardening, these brief directions in the preparation and preservation of vegetables have been prepared.
