Improving Nutrition in a Day Care Program through a Multidimensional Approach.

This practicum project sought to improve nutrition in a day care program serving children ages 2 through 14 years by increasing staff, student, and parent knowledge about nutrition. The primary goal was to increase knowledge and interest in nutrition and its relation to wellness of students, staff, and parents. The second goal was to provide adequate informative resources incorporating multidimensional approaches and activities in nutrition education. The program emphasized prevention measures by means of promoting healthier eating habits and an interest in exercise. A needs assessment was conducted to identify areas of instruction. Children were exposed to the benefits of a variety of foods, including ethnic foods. Staff training and parent outreach regarding nutrition were conducted to increase involvement. The intervention with the children included activities related to the current Department of Agriculture nutrition recommendations, preparation of healthy foods, students' weight and height statistics, poster contests, films on nutrition, nutrition labels, and general nutrition information related to decreased use of fat, salt, and sugar in children's diets and increased use of fruits, vegetables, milk products, and fiber. Intervention evaluation results found increased student and staff interest in nutrition, and better knowledge of food and its relation to better health. There was a marked improvement in the children's food choices and amount of nutritious food intake. (Three appendices contain the data collection instruments. Contains 47 references.) (Author)
