This manual presents a 10-day lesson plan for day camp and after-school program leaders. The activities and experiments described in the manual focus on nutrition and space exploration. Topics covered by the lesson plan and specific projects include: (1) gravity; (2) food spoilage; (3) model rocket building and launching; (4) the basic food groups; (5) weightlessness; (6) food preservation and dehydration; (7) high- and low-fat foods; (8) the influence of sensory perception on food likes and dislikes; (9) dehydrated and rehydrated foods; and (10) germs and bacteria. Each experiment and activity description provides the instructor with background information; a list of needed materials; an explanation of the actual experiments, activities, and games; and a discussion of what children should learn from the project. An appendix provides a list of the characteristics of 9- to 11-year-olds; a pre- and posttest for the child participants; National Aeronautics and Space Administration (NASA) descriptions of living and working in space; NASA facts on the Space Shuttle and its food systems; questions and answers on irradiated food; a bibliography of 11 books on space for 9- to 11-year-olds; and a discussion of the benefits of food dehydration.
